Satay mushrooms

Ingredients

2 tbsp butter or oil
4 cups chopped mushrooms
1 onion diced
1 tbsp ginger
1 can of beans (I used five bean mix as it was in the cupboard, but I reckon cannelli or butter beans would be good, also chickpeas)
1 can coconut milk
2 tbsp salted peanut butter
1 pkt pad thai noodles
fish sauce to taste
Juice of 1 lemon
3 thai red chillies chopped
corriander to serve (if you’ve got it, I didn’t)

Method

Cut up chillies and put in lemon juice — put to the side. Saute mushrooms and onions. Add ginger when onions translucent. Add beans and coconut milk and peanut butter and simmer. Meanwhile boil pad Thai noodles. Add noodles to mix when cooked with fish sauce to taste. Serve with lemon chilli sauce and coriander.

Korma dahl

Ingredients

1 pkt red lentils washed (375g)
2–4 tbsp oil (I used rice bran oil, use ghee/butter if you like)
2 onions diced
2 tbsp mustard seeds
1 tbsp garam masala
1 tbsp ground cumin seed
1/2 tbsp ground corriander seed
1/2 tbsp paprika
2 red chillies chopped
1 tbsp diced ginger
2 cloves garlic finely chopped
700g passata (or 2 tins of chopped tomatoes or tomato purre)
500ml water
Cubed potatoes
Chopped carrots (1–2cm cubes)
Salt to taste
3 cups basmati rice (any rice will do)
1 cup Cream (use coconut cream for vegans)
1/2 cup Almond meal
Serve with greek yogurt and mango chutney (coriander if you’ve got it). Chopped fresh tomatoes with mint would also be yum.

Method

Boil potatoes. In a separate pan, saute onions on low until translucent. Add mustard seeds and cook for 2min. Add rest of spices, ginger and garlic mix and cook for about 5min. Add washed red lentils, passata and about 500ml water to pot. Add chopped carrots and boiled potatoes. Bring to boil and then reduce to a moderate simmer with lid on for half an hour or so while red lentils disintegrate and carrots soften. Add cream slowly, stirring. Add almond meal. Add salt to taste. Serve with rice, yogurt, mango chutney and coriander, plus any other side dishes like raita, poppadoms etc…
